Benefits and Properties of Extra Virgin Olive Oil

Extra virgin olive oil, also known by many as 'liquid gold', is one of the greatest treasures we have in Spain. Not only for its flavour and properties, but also for the benefits its nutrients provide. It is, without a doubt, one of the healthiest foods and, in this post, we tell you why. 

To the surprise of many, EVOO and cholesterol are great friends. As it is a product of vegetable origin, it does not contain cholesterol, in fact, it helps to reduce LDL (bad) cholesterol levels and increase HDL (good) cholesterol levels due to the oleic acid of the Omega 9 series present in the oil.  

It contains polyphenols that help improve blood circulation and the cardiovascular system. These are plant-derived compounds with potent antioxidant properties that help boost immune system activity, as well as anti-inflammatory properties, which help reduce muscle aches and pains. In addition, polyphenols protect the fatty acids in the oil from oxidation. 

Early-harvested EVOOs, i.e. those made from green olives that have just been picked at the right point of ripeness, have a higher concentration of polyphenols. These also help to delay the appearance of wrinkles. 

Another great - and unknown - benefit of extra virgin olive oil is that it helps to reduce weight, as long as it is accompanied by a healthy diet and physical exercise. Its moderate consumption helps to speed up the metabolism and eliminate unhealthy fats. It also helps to regulate intestinal transit and combat constipation. It is a great natural remedy that protects us from gastrointestinal diseases, avoiding the sensation of acidity in the stomach. 

The antioxidants contained in extra virgin olive oil help to strengthen our immune system and protect us against bacteria, viruses and autoimmune diseases.
