About the oil mill

In Baeza, a World Heritage city, is the El Alcázar cooperative, origin of the Olibaeza brand, founded in 1951, which has grown from a small group of farmers to become one of the most important cooperatives in Jaén, with more than 1,200 members and over 554,000 cultivated olive trees.

In 2008, they moved to modern facilities equipped with cutting-edge technology to ensure thorough control
of production
and obtain extra virgin olive oil of the highest quality.

Olibaeza is the early harvest oil line of this cooperative, created to offer Premium and Gourmet EVOO, made with selected picual and arbequina olives. These oils concentrate all the aroma and flavor of the Jaén olive groves thanks to care at every stage, from flowering to cold extraction and bottling. The result is oils with body, aromatic intensity, and a unique character, which transform any dish into a gastronomic experience.

Aove features Picual

The Picual variety is the most representative of extra virgin olive oil in Spain, covering more than 50 % of the olive grove in our country, especially in the province of Jaén, although it is also very present in other areas of Andalusia such as Córdoba or Granada. Its name is due to the shape of its fruit, which ends on a small tip or “peak”.


His color can vary from bright green to gold, depending on the degree of maturation of the olive and the moment of collection. It is an oil with great oxidative stability, which means that it is preserved very well without losing properties, aromas or flavor over time. Its complex structure and powerful profile make it unmistakable.


A whole identity symbol in the AVE culture, the Extra picual virgin olive oil stands out for its intensity and sensory wealth, as well as for its high concentration of polyphenols and a percentage of oleic acid greater than 75%, which translates into beneficial properties for the cardiovascular system, helping to reduce LDL cholesterol (bad cholesterol) and increase HDL (good cholesterol).

Pairing

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and sautéed vegetables. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
