About the oil mill

Hacienda el Palo has established itself as one of the most internationally recognized olive mills for the quality of its oils. Its winery ranks among the top five in the world thanks to the excellence achieved in the production of Extra Virgin Olive Oil. This prestige is the result of a constant commitment to innovation, research, and the daily effort of its team.

In its modern facilities, the olives are carefully cleaned, removing leaves and stems, then transferred to stainless steel hoppers where the crushing process begins. After milling, the paste is stirred to form oil droplets which, through a physical centrifugation process, are separated from the other components thanks to centrifugal force.

The result is a pure, balanced, and extraordinarily high-quality oil. Hacienda el Palo conceives oil not only as a healthy food but as a means to enjoy a full sensory experience, where aroma and flavor become the protagonists.

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. Raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and vegetable sautés. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
