
Refined Olive Oil: What It Is and Common Uses
Refined olive oil is a type of oil obtained from virgin olive oils that do not meet the necessary conditions to be consumed directly. After undergoing an industrial refining process, a more neutral oil is achieved, with lower acidity, no marked sensory defects, and a much milder flavor.
It should not be confused with extra virgin olive oil. EVOO is obtained only by mechanical procedures and retains the aroma, flavor, and much of the natural compounds of the olive. What is the refining process like?
The refining of olive oil seeks to correct defects and stabilize the product. It is not a simple filtration. It is a technical process with several phases that modify the oil to make it more neutral and suitable for certain uses.
The stages can vary depending on the initial quality of the oil and the final objective, but the most common are the following.
Purification or Degumming
Purification, also known as degumming, removes substances such as phospholipids, mucilages, moisture residues, and other impurities that can affect the stability of the oil.
These substances can generate turbidity, sediments, or problems in later stages of refining. By removing them, the oil becomes cleaner and ready for the next treatments.
In the case of olive oil, this stage may be less relevant than in other vegetable oils, but it is still useful when the starting oil has certain impurities.
Neutralization
The purpose of neutralization is to reduce the free acidity of the oil. To do this, free fatty acids, which are responsible for high acidity and some instability, are removed.
This phase is key when the oil comes from defective raw materials or olives in poor condition, fermented or poorly preserved. After neutralization, the oil becomes milder and more stable.

Decolorization
Decolorization reduces pigments, oxidation residues, and compounds that give the oil an undesired color. For this, bleaching earths or other absorbent materials are usually used to capture some of these substances.
The result is a clearer and more uniform oil. This phase also helps eliminate some compounds that could affect the stability or final appearance of the product.
However, at the same time, part of the oil's visual and natural identity is lost. In an EVOO, color alone does not determine quality, but it is part of its natural expression along with aroma and flavor.
Deodorization
Deodorization removes unwanted odors and flavors through steam and controlled high temperatures. It is one of the most important phases of refining, as it turns an oil with sensory defects into a neutral oil.
After this stage, the oil loses much of its original aroma. This can be useful for the food industry, where sometimes a fat is needed that does not interfere with the flavor of the final product.
But from a gastronomic point of view, this neutrality is also a limitation. A good extra virgin olive oil provides fruitiness, bitterness, pungency, green, sweet, or herbaceous notes depending on the variety. Refining does not offer that complexity.
Winterization
Winterization consists of cooling the oil to separate waxes or other components that can solidify at low temperatures. The oil is then filtered to remove those particles.
This phase aims to improve appearance and avoid cloudiness when the product is stored in the cold. It is more common in some vegetable oils, although it can be applied when the process requires it.
The ultimate goal is to obtain a stable, clear, and homogeneous oil.
Properties of refined olive oil
Refined olive oil maintains a fat base derived from the olive, with a significant presence of oleic acid. This differentiates it from other vegetable oils with profiles richer in polyunsaturated fats.
It also has a mild flavor, a lighter color, and greater aromatic neutrality. These characteristics explain its use in cooking when an oil that does not impart too much flavor is desired.

EVOO better preserves the personality of the variety, the estate, the harvest, and the production process. Refined oil, on the other hand, seeks uniformity.
Differences between refined and pure olive oil
The term “pure olive oil” can cause confusion. In Spain and in the European Union, it is not a common commercial designation within the current consumer sales categories. In many contexts, it has been used to refer to olive oil made up of refined oil and a portion of virgin or extra virgin oil.
Therefore, the main difference is in the composition and in the use of the term.
Refined olive oil is the product that comes from the refining process. It is neutral, with low acidity and hardly any aroma or flavor.
The so-called “pure” olive oil, when that name is used colloquially or commercially in other markets, usually refers to a blend of refined oil with virgin oil. That small proportion of virgin is added to give it some flavor, color, and aroma.
In contrast, extra virgin olive oil does not contain refined oil. It is obtained directly from olives and only by mechanical means. That is why it is the most interesting category when seeking sensory quality, nuances, and for raw consumption.
Uses of refined olive oil
Refined olive oil is mainly used when a stable, mild, and neutral-tasting oil is desired. It is not usually the best option for dressing a salad, finishing a dish, or dipping bread, because in those uses aroma and flavor are very important.
Its most frequent applications are in the food industry, frying, and preparations where consistency is sought.
Base for processed products
Refined olive oil can be used as a fat base in processed products. Its neutral flavor allows it to be incorporated without greatly modifying the food’s profile.
It can appear in sauces, preserves, prepared dishes, snacks, savory creams, or packaged products. For the industry, it offers a clear advantage: consistency. Each batch behaves similarly and does not provide strong notes that would alter the recipe.
On the other hand, when oil is an important part of the final flavor, extra virgin offers superior quality. In a gourmet preserve, a cold soup, a toast, or a salad, EVOO not only provides fat: it brings character.
Industrial frying
Another common use of refined oil is in industrial or large-scale frying. Its neutrality and stability make it suitable for processes where performance and control are needed.
Even so, not all refined oils are the same, nor are all uses recommended. The quality of the oil, the temperature, the usage time, and renewal greatly influence the result.
At home, extra virgin olive oil can also be used for frying. In fact, it offers good stability and provides a better sensory profile. The choice will depend on the budget, the type of recipe, and the flavor you want to achieve.
Bakery and Pastry
In bakery and pastry, refined olive oil can be used when a milder fat is desired that does not overpower the flavor of the dough.
It can work in breads, savory doughs, cakes, muffins, or products where a tender texture is desired without imparting an intense oil flavor. For industrial preparations, that neutrality facilitates more standardized recipes.
However, in artisanal recipes, EVOO can provide a distinctive value. A cake with arbequina, a focaccia with hojiblanca, or a bread with picual can have more personality and a better connection with Mediterranean culture.
In summary, refined olive oil fulfills a specific function within the olive oil sector. It is useful for uses where neutrality, stability, and consistency are sought. But it should not be confused with extra virgin olive oil.
