What is EVOO?

EVOO are the acronyms of Aceite de Olive INany ANDxtra, or what is the same, the highest quality natural olive juice obtained directly from olives and only through mechanical procedures. It is the oil that is extracted naturally so that the properties of the olive remain intact. 

Until a few years ago, the word EVOO -in English EVOO (Extra Virgin Olive Oil)- It was used by experts who work in the olive sector, but its use is increasingly common among oil consumers thanks to its dissemination on social networks, restaurants or through gastronomic influencers that promote a healthy lifestyle and include this term among his numerous posts.  

What is EVOO and what is it for?

The EVOO is the higher quality olive juice which is elaborated in the mills complying with the established requirements. For an oil to be labeled as extra virgin it must be obtained from olives and only by mechanical procedures. Another requirement is that your degree of acidity -free fatty acids- must be less than 0.8%, although most do not usually exceed 0.3% since the less acidity it has, the higher the quality of the EVOO. 

We must know that not everything is extra virgin olive oil. The term "olive oil" it can mask other types of products that have nothing to do with EVOO. When you buy dry olive oil you are buying a lower quality oil than EVOO since it consists of a blend of refined olive oils and virgin olive oils so it is necessary to refine it to improve its flavor and smell, causing the oil to lose some of its properties, such as the polyphenols present in the olive. And, although the label of this oil indicates that its acidity is less than 0.4%, it is important to know that it is not extra virgin olive oil (EVOO). 

EVOO is the perfect ally in the kitchen. Its versatility provides aromas and flavors to food, enhancing the flavor of dishes and, in addition, allows to preserve intact its qualities and properties at temperatures up to 210º. It is important that it be kept in places where there is not much light at a temperature between 18º and 22º. In addition to its use in cooking, the best way to appreciate its flavor and take advantage of all its benefits is consuming it raw since it is a 100% natural product that has not undergone any transformation. Its high oleic acid content helps reduce bad cholesterol and increase good cholesterol. It is also a source of natural antioxidants such as polyphenols or vitamin E.

When to buy EVOO?

Between the months of October and November the highest quality extra virgin olive oil is obtained, that of early harvest, moment in which the olive has a green color. This early harvest oil is the highest quality and has a green color, an intense flavor and a unique aroma. So the best time to buy the best EVOO is between October and december
