About the oil mill

In its modern facilities, the olives are carefully cleaned, removing leaves and stems, then transferred to stainless steel hoppers where the crushing process begins. After milling, the paste is stirred to form oil droplets which, through a physical centrifugation process, are separated from the other components thanks to centrifugal force.

La variedad Hojiblanca es una de las más representativas del sur de España, especialmente presente en las provincias de Córdoba, Málaga y Sevilla, que a día de hoy es la tercera más cultivada en nuestro país. Su nombre hace referencia al tono plateado de sus hojas, siendo una variedad muy apreciada no solo para la producción de aceite, sino también como para aceituna de mesa.
