The unfiltered oil has a unique character and changes over time, making it a fleeting experience. As time passes, its fresh green notes soften, and its bitterness and spiciness evolve. This oil 'scratches' the palate and has a characteristic intense aroma.

Its freshness translates into a high content of chlorophylls and polyphenols, responsible for its green color and bitter and spicy flavor. However, being a fresh product, it is recommended to consume it within a short period as it degrades quickly, making it even more valuable for those seeking an exceptional culinary experience.

    About the oil mill

    Hacienda el Palo has established itself as one of the most internationally recognized olive mills for the quality of its oils. Its cellar ranks among the top five in the world thanks to the excellence achieved in the production of Extra Virgin Olive Oil. This prestige is the result of a constant commitment to innovation, research, and the daily effort of its team.

    In its modern facilities, the olive is carefully cleaned, removing leaves and stems, then transferred to stainless steel hoppers where the milling process begins. After grinding, the paste is stirred to form oil droplets which, through a physical centrifugation process, are separated from the other components thanks to centrifugal force.

    The result is a pure, balanced, and extraordinarily high-quality oil. Hacienda el Palo conceives oil not only as a healthy food but as a means to enjoy a full sensory experience, where aroma and flavor become the protagonists.

    La variedad Picual es la más representativa del aceite de oliva virgen extra en España, abarcando más del 50 % del olivar en nuestro país, especialmente en la provincia de Jaén, aunque también está muy presente en otras zonas de
    Andalucía como Córdoba o Granada. Su nombre se debe a la forma de su fruto, que termina en una pequeña punta o “pico”.


    Su color puede variar del verde brillante al dorado, dependiendo del grado de maduración de la aceituna y del momento de recolección. Es un aceite con una gran estabilidad oxidativa, lo que significa que se conserva muy bien sin perder propiedades, aromas ni sabor con el paso del tiempo. Su estructura compleja y su perfil potente lo hacen inconfundible.


    Todo un símbolo de identidad en la cultura del AOVE, el aceite de oliva virgen extra Picual destaca por su intensidad y riqueza sensorial, así como por su alta concentración de polifenoles y un porcentaje de ácido oleico superior al 75%, lo que se traduce en propiedades beneficiosas para el sistema cardiovascular, ayudando a reducir el colesterol LDL (colesterol malo) y a aumentar el HDL (colesterol bueno).

    Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
    although balanced.


    Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


    In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and sautéed vegetables. Additionally, it also works as a final touch
    in cold creams
    like salmorejo or ajoblanco, enhancing their flavor.
