About the oil mill

Synonym of innovation in the heart of Jaén, Picualia was born in 2009 as a result of the merger of two historic cooperatives from Bailén: Agrícola de Bailén and Virgen de Zocueca.

Specialized in the picual variety, the olive mill has revolutionized the sector through its commitment to quality and technology. Indeed, Picualia has modern facilities that guarantee an impeccable production process, from early harvesting to cold extraction and packaging.

The commitment of its farmer members has allowed Picualia to receive more than 50 national and international awards, being recognized as the Best Olive Mill in Spain by AEMO in 2016. Its oils are authentic olive juices, rich in antioxidants and perfect for a healthy diet.

Aove features Picual

The Picual variety is the most representative of extra virgin olive oil in Spain, covering more than 50 % of the olive grove in our country, especially in the province of Jaén, although it is also very present in other areas of Andalusia such as Córdoba or Granada. Its name is due to the shape of its fruit, which ends on a small tip or “peak”.


His color can vary from bright green to gold, depending on the degree of maturation of the olive and the moment of collection. It is an oil with great oxidative stability, which means that it is preserved very well without losing properties, aromas or flavor over time. Its complex structure and powerful profile make it unmistakable.


A whole identity symbol in the AVE culture, the Extra picual virgin olive oil stands out for its intensity and sensory wealth, as well as for its high concentration of polyphenols and a percentage of oleic acid greater than 75%, which translates into beneficial properties for the cardiovascular system, helping to reduce LDL cholesterol (bad cholesterol) and increase HDL (good cholesterol).

Pairing

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and vegetable sautés. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
