About the oil mill

In Baeza, a World Heritage city, is the El Alcázar cooperative, origin of the Olibaeza brand, founded in 1951, which has gone from being a small group of farmers to becoming one of the most important cooperatives in Jaén, with more than 1,200 members and over 554,000 cultivated olive trees.

In 2008, they moved to modern facilities equipped with cutting-edge technology to ensure thorough control
of production
and obtain extra virgin olive oil of the highest quality.

Olibaeza is the early harvest oil line of this cooperative, created to offer Premium and Gourmet EVOO, made with selected picual and arbequina olives. These oils concentrate all the aroma and flavor of the Jaén olive grove thanks to care at every stage, from flowering to cold extraction and bottling. The result is oils with body, aromatic intensity, and a unique character, which transform any dish into a gastronomic experience.

EVOO Features Picual

La variedad Picual es la más representativa del aceite de oliva virgen extra en España, abarcando más del 50 % del olivar en nuestro país, especialmente en la provincia de Jaén, aunque también está muy presente en otras zonas de Andalucía como Córdoba o Granada. Su nombre se debe a la forma de su fruto, que termina en una pequeña punta o “pico”.


Su color puede variar del verde brillante al dorado, dependiendo del grado de maduración de la aceituna y del momento de recolección. Es un aceite con una gran estabilidad oxidativa, lo que significa que se conserva muy bien sin perder propiedades, aromas ni sabor con el paso del tiempo. Su estructura compleja y su perfil potente lo hacen inconfundible.


Todo un símbolo de identidad en la cultura del AOVE, el aceite de oliva virgen extra Picual destaca por su intensidad y riqueza sensorial, así como por su alta concentración de polifenoles y un porcentaje de ácido oleico superior al 75%, lo que se traduce en propiedades beneficiosas para el sistema cardiovascular, ayudando a reducir el colesterol LDL (colesterol malo) y a aumentar el HDL (colesterol bueno).

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and sautéed vegetables. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
