CHARACTERISTICS OF OUR EMERALD GREEN OLIVE OILS
The Aceite of the virgin olive outside Olibaeza It is an oil that comes from a city with a great olive tradition and a World Heritage Site, baeza. From the heart of the province of Jaén, one of the most prestigious olive juices is made, obtained in a physical and natural way that results in an EVOO with soft, fruity flavors and full of aromas that remind us of the countryside.
Among the oils produced in the Alcazar Cooperative The large-format traditional picual stands out, perfect for day-to-day use in our kitchen, and on the other hand, the early harvest in the Premium varieties, of picual olives, and Gourmet, of arbequina olives.
WHY USE OLIBAEZA EXTRA VIRGIN OLIVE OIL?
Olibaeza is currently the best EVOO in the world, as recognized by the prestigious guide Evooleum, considering for the first time a cooperative oil as the best extra virgin olive oil in the world.
It is an oil made with olives that come from the traditional olive grove (even a large part of them are ancient olive trees) after a rigorous selection of each of the trees. After selecting the olives that are at their optimum ripening point, the process in the oil mill is extremely scrupulous and everything is worked cold and under mechanical procedures.
All this allows to give rise to an EVOO with a very intense aroma that is perceived from a distance and with an exquisite flavor. In addition, it has multiple benefits for our health due to its high content of natural antioxidants (polyphenols) and its high content of oleic acid.
PRICES OF OLIBAEZA OILS
The El Alcázar Cooperative produces two types of oil: early harvest extra virgin olive oil (selected as the best in the world by the prestigious EVOOLEUM Guide) and the most traditional extra virgin olive oil for daily consumption.
The price is different mainly due to the yield of the olive, since for the production of olive oil early harvest, which is made from green olives at the beginning of October, the yield level is 10%. However, extra virgin olive oil from formato 2l y 5l, is obtained from olives harvested during the month of December with a more mature fruit and whose yield is close to the 23% on average If we add to this the selection process of the olive tree under the supervision of experts to obtain the premium oil, it makes us understand the reason for the difference in prices.
