About the oil mill

Propiedad de Galgón 99, S.L., la almazara de Oro Bailén se sitúa en un enclave privilegiado de la provincia de Jaén, en Villanueva de la Reina, a los pies de Sierra Morena y entre los municipios de Bailén y Andújar, a 400 metros de altitud. Conocida como la puerta de Andalucía, esta localización acoge las fincas Los Juncales y La Casa del Agua, donde los olivos siguen un marco de plantación tradicional (10x10
metros con tres plantas por pie), lo que favorece una producción equilibrada y de gran calidad.

El proceso de elaboración del aceite comienza en menos de dos horas desde la recogida, garantizando la máxima frescura del fruto. La molturación y el batido se realizan en frío, sin superar los 21 ºC, lo que permite obtener un AOVE de altísima calidad.

Además, la almazara apuesta por una producción integrada, totalmente respetuosa con el entorno: reutiliza los restos de poda como abono orgánico, mantiene la cubierta vegetal y reduce el uso de herbicidas. Un equipo técnico externo formado por biólogos e ingenieros agrícolas supervisa cada fase, asegurando un equilibrio perfecto entre tradición, innovación y sostenibilidad.

EVOO Features Picual

The Picual variety is the most representative of extra virgin olive oil in Spain, covering more than 50% of the olive groves in our country, especially in the province of Jaén, although it is also very present in other areas of Andalusia such as Córdoba or Granada. Its name comes from the shape of its fruit, which ends in a small point or “beak”.

Its color can vary from bright green to golden, depending on the degree of ripeness of the olive and the time of harvest. It is an oil with great oxidative stability, which means it preserves very well without losing properties, aromas, or flavor over time. Its complex structure and powerful profile make it unmistakable.

A true symbol of identity in the EVOO culture, the extra virgin olive oil Picual stands out for its intensity and sensory richness, as well as for its high concentration of polyphenols and an oleic acid percentage above 75%, which translates into beneficial properties for the cardiovascular system, helping to reduce LDL cholesterol (bad cholesterol) and increase HDL (good cholesterol).

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and vegetable sautés. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
