About the oil mill

Palacio de los Olivos produces exceptional extra virgin olive oils thanks to meticulous care of its olive grove, located in a privileged environment. Each plot receives detailed monitoring by technicians and agronomist engineers, who record every task in a field notebook: irrigation, fertilization, pruning, and soil treatment.

The constant study of nutrients and soil conditions allows optimizing the development of the tree and the quality of the fruit. When the olive reaches the optimal ripeness point, it is harvested and processed quickly to preserve all its properties.

Palacio de los Olivos is synonymous with extra virgin olive oil of great complexity, balance, and freshness,
resulting from complete traceability from the tree to the consumer.

PAIRING

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.

Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.

In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice dishes, stews, and sautéed vegetables. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
