Under the supervision of Juan Manuel Ramos, Mill Master born on the estate itself, the entire process is carefully tended. Juan Manuel, continuing his mother's legacy, selects each olive at the optimal moment of ripeness and ensures that the freshness of the fruit is preserved to the last drop.
