About the oil mill

Ubicada en pleno corazón del Parque Natural de las Sierras Subbéticas (Córdoba), Almazaras de la Subbética es una cooperativa de primer grado formada por más de 7.000 familias. Fundada en 2007 tras la fusión entre las cooperativas Virgen del Castillo y Nuestro Padre Jesús Nazareno, en 2020 sumó también a la Cooperativa Agrícola de Rute, consolidando una comunidad olivarera con más de 60 años de experiencia.

Los olivares de montaña, de difícil acceso y elevada exigencia son el alma de esta almazara que combina tradición, innovación y respeto por el entorno natural. Sus agricultores han sabido superar los retos orográficos con técnicas modernas y maquinaria especializada, garantizando la máxima calidad en cada fase del cultivo.

El compromiso con la sostenibilidad, la biodiversidad y la calidad está presente en todo el proceso de producción. Almazaras de la Subbética representa el esfuerzo colectivo de una comunidad que vive en simbiosis con el olivo, ofreciendo AOVEs excepcionales reconocidos internacionalmente y con una fuerte identidad ligada a su territorio.

Aove features Hojiblanca

The Hojiblanca variety is one of the most representative in southern Spain, especially present in the provinces of Córdoba, Málaga, and Sevilla, and today it is the third most cultivated in our country. Its name refers to the silvery tone of its leaves, being a variety highly valued not only for oil production but also as a table olive.

The Hojiblanca extra virgin olive oil is a monovarietal characterized by a balanced and complex flavor, as well as having medium stability, which makes it suitable both for raw consumption and cooking.

One of the most exclusive in terms of nutritional level, the Hojiblanca EVOO is rich in antioxidants, healthy fatty acids, and vitamin E, making it an oil especially beneficial for health, helping to care for the cardiovascular system and maintain a balanced diet.

Pairing

Hojiblanca extra virgin olive oil offers a sweet start on the palate, followed by a slight bitterness and a spicy touch at the end. Its organoleptic profile
features notes of fresh grass, artichoke, and almond, making it a very versatile option in the kitchen, with an excellent balance between sweetness, bitterness, and spiciness.
