La variedad Picual es la más representativa del aceite de oliva virgen extra en España, abarcando más del 50 % del olivar en nuestro país, especialmente en la provincia de Jaén, aunque también está muy presente en otras zonas de Andalucía como Córdoba o Granada. Su nombre se debe a la forma de su fruto, que. termina en una pequeña punta o “pico”.

Su color puede variar del verde brillante al dorado, dependiendo del grado de maduración de la aceituna y del momento de recolección. Es un aceite con una gran estabilidad oxidativa, lo que significa que se conserva muy bien sin perder propiedades, aromas ni sabor con el paso del tiempo. Su estructura compleja y su perfil potente lo hacen inconfundible.
