About the oil mill

Property of Galgón 99, S.L., the Oro Bailén olive mill is located in a privileged enclave of the province of Jaén, in Villanueva de la Reina, at the foot of Sierra Morena and between the municipalities of Bailén and Andújar, at 400 meters altitude. Known as the gateway to Andalusia, this location hosts the Los Juncales and La Casa del Agua estates, where the olive trees follow a traditional planting framework (10x10
meters with three plants per tree), which favors a balanced and high-quality production.

The oil production process begins within less than two hours from harvesting, guaranteeing the maximum freshness of the fruit. Crushing and malaxation are done cold, not exceeding 21 ºC, which allows obtaining a very high-quality EVOO.

Additionally, the olive mill is committed to integrated production, fully respectful of the environment: it reuses pruning residues as organic fertilizer, maintains the ground cover, and reduces herbicide use. An external technical team made up of biologists and agricultural engineers supervises each phase, ensuring a perfect balance between tradition, innovation, and sustainability.

The Picual variety is the most representative of extra virgin olive oil in Spain, covering more than 50% of the olive groves in our country, especially in the province of Jaén, although it is also very present in other areas of Andalusia such as Córdoba or Granada. Its name comes from the shape of its fruit, which ends in a small point or “beak”.

Its color can vary from bright green to golden, depending on the degree of ripeness of the olive and the time of harvest. It is an oil with great oxidative stability, which means it preserves very well without losing properties, aromas, or flavor over time. Its complex structure and powerful profile make it unmistakable.

A true symbol of identity in the EVOO culture, the extra virgin olive oil Picual stands out for its intensity and sensory richness, as well as for its high concentration of polyphenols and an oleic acid percentage above 75%, which translates into beneficial properties for the cardiovascular system, helping to reduce LDL cholesterol (bad cholesterol) and increase HDL (good cholesterol).

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent, yet balanced, final spiciness.

Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.

In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice, stews, and sautéed vegetables. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
