About the oil mill

The S. Coop. And. Stmo. Cristo de la Misericordia, responsible for the brand La Quinta Esencia, has its origin in Jódar (Jaén) since 1952. Founded by a small group of olive growers, its goal was to protect and enhance the agricultural production of the area, producing and marketing high-quality extra virgin olive oils.

Over the years, this cooperative has managed to grow and modernize without losing its essence. Currently, it has about 700 members committed to the care of the olive tree and the environment. The location, at the gates of the Sierra Mágina Natural Park and the Upper Guadalquivir, allows cultivating olives in an environment rich in
biodiversity and natural resources.

La Quinta Esencia combines traditional techniques with the most innovative to obtain a balanced, fresh, and healthy oil. Its values focus on sustainability,
respect for the environment, and the constant pursuit of excellence, making its EVOO stand out for its purity and flavor.

Aove features Picual

The Picual variety is the most representative of extra virgin olive oil in Spain, covering more than 50% of the olive groves in our country, especially in the province of Jaén, although it is also very present in other areas of
Andalusia such as Córdoba or Granada. Its name comes from the shape of its fruit, which ends in a small point or “beak”.


Its color can vary from bright green to golden, depending on the degree of ripeness of the olive and the time of harvest. It is an oil with great oxidative stability, which means it preserves very well without losing properties, aromas, or flavor over time. Its complex structure and powerful profile make it unmistakable.


A true symbol of identity in the EVOO culture, the extra virgin olive oil Picual stands out for its intensity and sensory richness, as well as for its high concentration of polyphenols and an oleic acid percentage above 75%, which translates into beneficial properties for the cardiovascular system, helping to reduce LDL cholesterol (bad cholesterol) and increase HDL (good cholesterol).

Pairing

Picual EVOO has a medium to intense fruitiness, with notes of olive leaf, tomato, fig tree, green almond, and freshly cut grass. On the palate, it offers a powerful flavor, with a marked bitterness and a persistent final spiciness,
although balanced.


Picual extra virgin olive oil is perfect for those seeking intense, structured, and characterful flavors. When raw, its best version is shown on sourdough toast with grated tomato or avocado, where it displays all its power. It is also ideal for dressing salads with bitter or spicy ingredients, such as arugula, escarole, red onion, mustard, or cured cheeses.


In hot dishes, it withstands high temperatures very well, making it excellent for crispy frying, meat stews, sofritos, baked rice dishes, stews, and sautéed vegetables. Additionally, it also works as a final touch
in cold creams
like salmorejo or ajoblanco, enhancing their flavor.
